The other night, Earth Balance invited me to a plant-made dinner party. I’ve been a huge fan of their vegan cheddar puffs so I was super excited to see the menu for the night. If you follow me on Insta Stories, you already got a peek of the delicious event. But here’s a recap of my favorites of the night:
King Oyster Mushroom Scallops
Appetizers are generally my fave part of a meal. While the tomato and watermelon gazpacho and smoked carrot lox blinis were both tasty, I could not stop eating the chef’s vegan take on scallops. Mushroom were marinated with Earth Balance Original Butter Spread and placed on top of cashew cream sweet pea puree. So delish!
Peanut Butter Party Favors
Desert was a peanut butter mousse with coconut whip. It was so creamy and fluffy I can’t wait to try something similar at home. And I’ll definitely be eating it with this adorable spoon that was tied to a jar of peanut butter as a party favor. I visited the designer’s shop on Etsy and already brainstormed a few future gift ideas for my foodie friends.
I’ve been super into cooking recently so it was so fun meeting a whole new group of people. Many of them have food blogs so I spent hours after the event pinning healthy recipes to try out soon. Check out my Pinterest for some ideas!
